Made from carefully selected Koroneiki olives grown on a small-family farm in Southern Greece, this Klēa selection is a warm reflection of Mediterranean tradition and the precision of modern processing.  Cold-extracted within hours of harvest, it preserves the natural character of the fruit and its vibrant aromatic profile.

This is the real deal! You'll be happy to know all of our oils are independently laboratory tested and meet the highest standards with exceptionally low oxidation, excellent freshness and of course unadulterated purity.  This is single-olive, single-farm premium olive oil!

Can you cook with it? Yes.  Low temps for slow and delicious cooking. 

Can you do shots of it as a daily tonic? Yes.

Can you marinade with it? Yes.  Add some vinegar, lemon, garlic and salt for the best food you can eat.

Salads and sandwiches?  Yes.  3/4 Koroneiki, 1/4 white wine vinegar, salt, pepper, a little oregano.  Use a coffee milk frother to emulsify and you've got gold. 

Bread? Yes.  Drizzle Koroneiki on some toasted bread, dash it up with powdered garlic and a little salt... you know what I'm talking about!

Processing:  Hand-harvested, Cold-pressed within 24 hours in a state-of-the-art facility,

Polyphenols:  At 716 mg/KG this oil is considered highly therapeutic.  Compounds at these levels are what make it a "super food" rather than just a regular monounsaturated fat.  Most supermarket brands are in the 100-200 range.
